Pistachio Butter

I love peanut butter, but my body responds with a headache the following day or two.  My daughter (who is still breastfed) responds to sunflower seeds and almonds, so sunbutter and almond butter are out for me too.


I LOVE pistachios.  I could eat an entire bag in one sitting.

Nuts contain enzyme inhibitors.  Eatting nuts that haven’t been soaked can really strain your digestion and limit the nutrients you are able to absorb.  However, properly soaking nuts makes them easy to digest and your body gets more nutrients.  Once nuts are soaked, they need to be  dehydrated ( you can use an oven on the lowest setting.  I use our Breville Smart Oven. )  Nuts need to be fully dry so mold doesn’t grow.

After soaking and dehydrating pistachios, I like to make pistachio butter as an alternative to peanut butter.  It’s so easy.  All you need is a food processor.


Put your nut of choice in the food processor and process till you get the desired texture.  And you have your very own homemade nut butter! I love to put pistachio butter on apples or flatbread with applesauce.
